Arlene's Turkey Meat Loaf 2 lb. ground turkey 1 c. bread crumbs OR stuffing mix 1 c. large apple, cored, peeled, and chopped 3/4 c. celery, chopped 1/4 c. raisins (optional) 1/4 c. broken walnuts (optional) 2 eggs beaten well with 2 T. milk 1 tsp. poultry seasoning 1 tsp. salt 1/2 tsp. pepper 2 strips of bacon (for the top)
Preheat oven to 350 degrees. Assemble all ingredients and put meat in a large mixing bowl. (Ground meat is easier to work with at room temperature.) Mix all ingredients with hands. Form into a roll and place in a shallow baking pan. Lay bacon strips on top of roll. Bake for one hour. Remove from oven and allow to cool slightly before slicing. Serve with cranberry sauce.
