Potato Salad
2 1/2 lbs. small boiling potatos, red and white
1/2 bunch green onions, chopped
1/2 bunch cilantro, chopped
1/2 red onion, diced
2 stalks celery, diced
mayonnaise
mustard
lemon juice
salt and black pepper
2 or 3 hard boiled eggs, peeled and sliced
Wash the potatos, cut in halfs or quarters so that all potato pieces are the same size, cover with water in a pot and bring to a boil, cooking until soft. Strain and cool potatos. Toss cooled potatoes with remaining ingredients to taste. Garnish with eggs.
