Arlene's Orange-Raisin Muffins 1 large orange, cut in pieces 1 1/4 c. buttermilk 1/2 c. melted butter (or canola oil) 2 eggs, slightly beaten 1 c. white flour 1 c. whole-wheat flour 2 c. oat bran 2 tsp. soda 1 1/2 tsp. salt 1/2 c. sugar 1 c. chopped raisins and/or dried apricots
Puree orange and blend with enough buttermilk to yield 2 cups. Add butter and eggs. Sift all other ingredients (except for raisins and apricots) together and add to mixture. Stir in raisins, optional apricots, nuts. Bake in muffin tin at 350 degrees for 20-25 min. Makes 2 dozen.
