Arlene's Green Chili Chicken 1 whole fryer 1/2 c. diced onion 2 tsp. chili powder 1 can (4 oz.) diced mild green chilies 3/8 tsp. cayenne pepper 1 tsp. cumin 1 tsp. salt 3/4 c. chicken broth 2 T. flour 1 T. oil 2 T. water 2 pressed garlic cloves 1/2 c. sour cream at room temperature
Rub outside of chicken with mixture of chili powder, cayenne, cumin, and salt. Brown chicken on all sides in Dutch oven (cast iron pot) in heated oil. Add garlic, onion, chilies, and broth. Cover and simmer for 35-45 minutes. Remove chicken to platter and skim fat. Blend flour and water and stir into sauce. Add sour cream and serve carved chicken with sauce.
